
2 tomatoes
2 sweet peppers (green and red)
2 onions
4 Oriental merguez
2 eggs
olive oil
coriander
1 hot or mild chilli
(whichever you prefer)
Finely chop the onions and sauté them in
a frying pan with the oil. Slice the peppers
and tomatoes and add them to the pan. Season with salt and pepper. Cover.
Add a little olive oil during cooking if y
ou wish.
Allow to simmer.
In another pan, fry the merguez sausages.
Then cut each sausage into 4 pieces and add them to the vegetables. Simmer over low heat. Once cooked, add the coriander. You can add
one egg per person on top of the whole
mixture in the pan.
