400 g white wine sausage

500 g fresh tagliatelle

500 g button mushrooms

1 shallot

1 garlic clove

Parsley

Salt

Pepper

Parmesan

Clean and chop the mushrooms into pieces. Peel and finely chop the garlic and shallot. Chop the sausages into pieces. Fry them in a frying pan on a gentle heat until golden brown.  Then, reduce the heat and add the mushrooms, garlic and the shallot to the frying pan. Cook for another 5 minutes.Cook the pasta in a large saucepan of boiling, salted water and drain once cooked.  Add a cup of water to the frying pan to deglaze any cooking juices stuck to the pan. Then, add the pasta and parsley. Season with salt and pepper and mix together. Serve the pasta with a little grated Parmesan.
