Pre-heat the oven to 180°C, then wash, de-seed and open the sweet peppers, taking care to, leave attractive lids. Arrange the peppers in a baking dish. Mix the stuffing, chopped parsley, diced tomatoes and finely chopped shallots. Fill the sweet peppers with the mixture, then put a lid on each of them.
Ingredients
5 sweet peppers
2 tomatoes
2 shallots
700g vegetables stuffing
parsley
Bake in the oven for 30-40 minutes.
You can tell it is cooked when the flesh of the peppers becomes tender and the skin slightly crumpled. Enjoy your meal!
Please note: This recipe can also be used to stuff other vegetables such as courgettes, tomatoes and mushrooms.
